That's just what honey does when it sits long enough. Pure honey crystallizes naturally over time because the glucose in it comes out of solution and forms fine crystals. Some honeys crystallize within weeks, others take months or years, depending on the floral source. Most producers warm crystallized honey back to liquid before jarring, but this product leaves it as crystals on purpose. The grainy texture is exactly what makes it work as a scrub.
