Is this a true monofloral raspberry honey?

Yes. Our Raspberry Honey is sourced from Washington state beekeepers whose hives work the raspberry fields during the brief spring bloom. It's raw and minimally filtered, with no added flavors and no added fruit. The berry character you taste comes entirely from the nectar the bees collected during those few weeks the canes were in flower. What's in the jar is what came back to the hive, plus careful straining and absolutely nothing else.

Why is Raspberry Honey limited edition?

Raspberry blossom honey is genuinely hard to source. The bloom window in the Pacific Northwest is short, the nectar yield from each hive is modest, and the number of beekeepers producing a true monofloral raspberry honey is small. We carry it in limited quantities, and when the current batch sells through, we can't guarantee when (or whether) we'll be able to source it again. If raspberry honey has been on your list, this is the season to act on that.

How do I use Raspberry Honey?

Anywhere you want berry sweetness without adding the fruit itself. Drizzle it over fresh ricotta or a soft brie, swirl it into plain Greek yogurt with summer berries, or use it as the sweetener in a vinaigrette paired with bitter greens (the brightness cuts through the bite beautifully). It also shines in tea, especially black or herbal varieties, where its floral edge comes through clearly. And on a piece of toast with butter, it earns its keep before breakfast is over.

How should I store raw honey?

Keep your honey at room temperature, away from direct sunlight, with the lid screwed on tight. A pantry shelf or cabinet works beautifully. Honey is one of the few foods that does not spoil, so there is no need to refrigerate it. In fact, the cold will speed up crystallization. If your jar does begin to set, that is normal and easily reversed with a warm water bath. Use a clean, dry spoon every time, and your honey will hold its character for years.

Why is my honey crystallizing, and is it still good?

Crystallization is what raw, minimally filtered honey does. It is not spoilage, not a defect, and not a sign that anything has gone wrong. Most varieties will start to set within a few months, depending on the floral source and the temperature of your kitchen. To return it to a pourable state, place the sealed jar in a bowl of warm (not boiling) water for a few minutes and stir gently. Skip the microwave, which can scorch the natural enzymes and aromatic compounds that make raw honey worth buying in the first place.
