Sweetly Floral, Delicate, and Hard to Get

Black Locust Honey is one of our premium limited edition honeys. These honeys are harvested and produced in seasonal small batches only. This one is a monofloral varietal that's created when bees pollinate the fragrant, wisteria-like blooms of black locust trees (Robinia pseudoacacia) in May and June. Sweet and floral in flavor with base notes of wax and vanilla, this is a fantastic variety to use on fluffy biscuits, with mild cheese, or blended with vanilla bean and butter. Light yellow-green in color. Also known as Acacia Honey in Europe.

Black locust trees are very adaptive and grow in a wide range of environments, leading them to be invasive in some locales - though, they're very beneficial for improving soil quality and providing a habitat for song birds, small mammals, and producing nectar for pollinators.

Black Locust Honey offers a unique taste experience that is both light and floral, with a delicate sweetness. Its flavor profile is characterized by prominent vanilla notes, creating a smooth and harmonious taste. The honey is subtly sweet, with hints of fruity and floral undertones that make it exceptionally pleasant on the palate. This makes it an ideal accompaniment for fresh cheeses, yogurt, or simply drizzled over pancakes and crepes.

Note: Our Black Locust Honey is pure, raw, and unamended, and is one of the few varietals that does not crystalize readily.

Ingredients

Pure, raw, minimally filtered honey

Black locust trees, scientifically known as Robinia pseudoacacia, are native to the southeastern United States but have been widely planted across the world due to their adaptability. These trees are known for their hard, durable wood and their ability to thrive in a variety of environments, making them both a valuable resource and, at times, an invasive species. Despite their sometimes problematic nature, black locust trees play a significant role in ecosystems by improving soil quality and offering a habitat for various wildlife, including birds, small mammals, and pollinators.

The black locust tree is easily identified by its pinnate leaves and distinctive white blossoms that bloom in late spring, typically around May and June. These fragrant, wisteria-like flowers are not only visually appealing but also serve as a crucial source of nectar for bees, leading to the production of the exquisite black locust honey, also known as acacia honey in Europe. The blossoms emit a sweet aroma that attracts bees, butterflies, and moths, making them an essential part of the pollination process.

In addition to their ecological benefits, black locust flowers are edible and can be used in various culinary applications. Their delicate, floral taste with hints of jasmine and vanilla makes them a delightful addition to salads, teas, and desserts. The blossoms can be harvested and enjoyed fresh or used to infuse flavors into syrups and beverages.

Overall, black locust trees and their blossoms are not only a source of delicious honey but also contribute significantly to biodiversity and the health of ecosystems where they grow.
