Black Locust Honey is one of our premium limited edition honeys. These honeys are harvested and produced in seasonal small batches only. This one is a monofloral varietal that's created when bees pollinate the fragrant, wisteria-like blooms of black locust trees (Robinia pseudoacacia) in May and June. Sweet and floral in flavor with base notes of wax and vanilla, this is a fantastic variety to use on fluffy biscuits, with mild cheese, or blended with vanilla bean and butter. Light yellow-green in color. Also known as Acacia Honey in Europe.

Black locust trees are very adaptive and grow in a wide range of environments, leading them to be invasive in some locales - though, they're very beneficial for improving soil quality and providing a habitat for song birds, small mammals, and producing nectar for pollinators.

Note: Our Black Locust Honey is pure, raw, and unamended, and is one of the few varietals that does not crystalize readily.
