The honey is minimally filtered and jarred by hand in Owings Mills, Maryland. The set is packed there too and ships ready to hand over, no wrapping required.
The color comes from the butterfly pea flower. Its petals carry natural pigments called anthocyanins, and they steep into a deep, true blue. Those same pigments react to acid, so a squeeze of lemon shifts the cup from blue to violet while you watch. It is the closest thing to a magic trick a teapot can do, and it works every time at a holiday table.
Mild and earthy, closer to a very light green tea than anything floral or sharp. The flavor is subtle enough that most people use it as a base to build on rather than drinking it plain, though it works either way. A drizzle of honey brings out a gentle sweetness without competing with the earthy undertone. Most of the magic of this tea is visual, but the flavor holds its own.
No fruit and no flavoring go into it. Blueberry honey is a varietal honey, named for the blossoms the bees were working when they made it. Bees forage on blueberry flowers in spring, and that nectar gives the honey its color and character. The name tells you where the bees were, not what was added. Like most real honey, it may crystallize over time, which is normal.
Not as a whole set, and we would rather be exact about it. Our blueberry honey is Star-K kosher certified. The blueberry honey candy is not kosher certified, so we do not describe the set as kosher. If you are shopping for someone who keeps kosher, one of our Star-K certified honeys on its own is the cleaner choice, and it still makes a lovely gift.
Keep the honey at room temperature with the lid on tight. It does not need the fridge, and cold speeds up crystallization. Keep the candy in its closed box somewhere cool and dry, because honey candy picks up moisture from humid air and can turn sticky. Store the tea in its glass jar away from sunlight and heat so the petals hold their color.
