William Blake gave bees their best one-line biography, and it fits this candy too. Chocolate is usually the moody one: it melts in a warm car, blooms in a pantry, sulks in a summer mailbox. So we gave cocoa a sturdier home. Real cocoa, folded into hard honey candy, holds all of chocolate’s depth with none of its drama.

Honey and cocoa are old companions. Both start with a blossom and a pollinator; cacao trees carry their own small white flowers, worked by tiny insects the way our bees work wildflowers.
