This is the real thing. Our Spanish Lavender is a true monofloral, harvested from hives positioned directly within the lavender fields of Spain during the late-spring bloom. No lavender is ever added to the jar. The floral character comes entirely from the nectar the bees collected, which is exactly why genuine lavender honey is so rare and why it tastes the way it does. Most honey labeled "lavender" in the US is lavender-infused, meaning the flavor is added to ordinary honey after the fact. This one earns its name.

Why is my honey crystallizing, and is it still good?

To return it to a pourable state, place the sealed jar in a bowl of warm (not boiling) water for a few minutes and stir gently. How should I store raw honey?

Keep your honey at room temperature, away from direct sunlight, with the lid screwed on tight. A pantry shelf or cabinet works beautifully. Honey is one of the few foods that does not spoil, so there is no need to refrigerate it. In fact, the cold will speed up crystallization. If your jar does begin to set, that is normal and easily reversed with a warm water bath. Use a clean, dry spoon every time, and your honey will hold its character for years.
