Six Jars. No Two Alike.

Line them up on the counter and the colors tell you before the spoons do. Six jars, six places, six flowers. The Royale Cellar holds our six rarest honeys in full-size jars, for the person who reads the label on a wine bottle and wants to do the same with honey.

Fireweed from Oregon, the first flower to bloom after a forest fire. Sourwood from Appalachia. Tupelo from the Florida swamps. Lavender from Spain. Apple blossom from upstate New York orchards. And Spring Honey harvested from our own hives at Chesterhaven Beach Farm on Maryland’s Eastern Shore, which happens once a year. When the Spring Honey is gone for the season, another Royale honey takes its place. Every jar says exactly what blossoms the bees were working when they made it.

These are our Royale honeys, and every jar is a full 11 ounces, not a petite. We jar them by hand in Owings Mills, minimally filtered, and pack all six in a custom carrier that keeps them upright and ready to give.

What Makes Our Royale Cellar Special?

  • Six Rare Honeys: Our rarest varietals, from five states and Spain, each from a single floral source. Nothing is blended and nothing is infused.
  • Six Full-Size Jars: Each jar holds 11 oz, for 66 oz of honey in all. This is a cellar, not a sampler.
  • Our Own Spring Honey: Harvested from our hives at Chesterhaven Beach Farm, a 102-acre no-spray farm on Maryland’s Eastern Shore, for as long as the season’s harvest lasts.
  • Star-K Kosher: Every honey we jar is Star-K kosher certified, including all six in this set.
  • Minimally Filtered: Jarred by hand in Owings Mills. If a jar crystallizes, that is the honey being real. Set it in warm water and it loosens again.
  • Custom Six-Jar Carrier: Packed in our own six-jar carrier, so the set arrives ready to hand over with nothing to wrap.

Pour a spoonful of each and let the table pick a favorite.

Perfect for: The friend who brings a good bottle to dinner and talks about the vineyard. The client who has everything except a reason to remember you. The host whose cheese board is basically an art project. Set out six small spoons, start with the lightest jar, and pass them around the table.

The Royale Cellar FAQs

What honeys come in the Royale Cellar?

Six full-size 11 oz jars of our rarest honeys: Fireweed from Oregon, Sourwood from Appalachia, Tupelo from Florida, Lavender from Spain, Apple blossom from upstate New York, and Spring Honey from our own hives at Chesterhaven Beach Farm on Maryland’s Eastern Shore. Each jar comes from a single floral source, and every label names the flower and the place.

Why is my honey crystallizing, and is it still good?

Crystallization is what raw, minimally filtered honey does. It is not spoilage, not a defect, and not a sign that anything has gone wrong. Most varieties will start to set within a few months, depending on the floral source and the temperature of your kitchen. To return it to a pourable state, place the sealed jar in a bowl of warm (not boiling) water for a few minutes and stir gently. Skip the microwave, which can scorch the natural enzymes and aromatic compounds that make raw honey worth buying in the first place.

How should I store the Royale Cellar honeys?

Keep the jars tightly closed at room temperature, away from the stove and direct sun. Don’t refrigerate them, since cold speeds up crystallization. Use a clean, dry spoon each time so no water gets into the jar. Stored this way, honey keeps for a very long time. Each jar is dated when we fill it in Owings Mills.

How do you serve six honeys side by side?

Put a small spoon or a plain cracker by each jar and start with the lightest color, working toward the darkest so the bolder honeys don’t crowd out the delicate ones. Sip water between spoonfuls. Look at the color, smell the jar, and notice how long the flavor stays. Most people pick a favorite by the third jar and argue about it by the sixth.
