The One Everyone is Obsessed With & Low in Stock
There’s a three-week window in spring when the world decides to show off. Black locust trees, wildflowers, fruit blossoms, lavender—it all explodes at once on Chesterhaven Beach Farm. The bees? They go into overdrive. The honey? It tastes like sunshine and flowers had a love child.
What Makes Our Spring Honey S
pecial?
- Single-farm origin: Every jar comes from Chesterhaven Beach Farm on Maryland's Eastern Shore — Kara's bees, Kara's flowers, Kara's harvest. There is no blending, no mystery sourcing, and no filler.
- A very short window: Black locust, fruit trees, wildflowers, and lavender don't all bloom at the same time for long. Kara times the harvest to catch that overlap at its peak, which is why the flavor is so concentrated and why the honey may sell out before the season ends.
- Floral, not perfume-floral: The flavor is bright and pollen-forward — the kind of floral that tastes like actually being outside in May, not like a candle. Sweet, but with enough complexity to hold its own next to strong cheese or savory food.
- Raw and minimally filtered: Nothing is added and as little as possible is removed. Natural pollen, enzymes, and character stay in the jar.
- May crystallize over time: That's what real raw honey does. It's not a flaw — it's a sign. Warm the jar gently in hot water to bring it back to liquid.
- Star K Kosher certified: Certified by Star K.
- A Honey Royale: Spring Honey is classified as a Honey Royale — a designation reserved for honeys we can't always get. These are not discounted, ever. When they're available, they're worth it.
Stock up while this season's harvest lasts — once it sells out, the next jar won't come until spring.
How to use: Spring honey's bright, floral character makes it one of the most versatile honeys in the kitchen. Drizzle it over a wedge of aged cheddar or blue cheese, where the sweetness cuts through the funk cleanly. Swirl it into Greek yogurt or fresh ricotta. Use it in a simple vinaigrette — honey, mustard, olive oil, and red wine vinegar — where the floral notes play well with bitter greens. It's also excellent stirred into chamomile or lavender tea, spread on a warm biscuit or scone, or eaten straight off a spoon, which is probably how most of it ends up going.

Spring Honey - Honey Royale FAQs
What makes Spring Honey different from other honeys?
Spring Honey is a farm honey, not a blended one. Every jar comes from Kara's own hives at Chesterhaven Beach Farm on Maryland's Eastern Shore, harvested during the few weeks each spring when black locust trees, fruit blossoms, wildflowers, and lavender are all in bloom at the same time. That specific combination of nectar (one farm, one season, one set of bees) is what gives Spring Honey its bright, pollen-forward character. It is not something that can be replicated year-round, and it is not something that can be sourced from anywhere else.
What does Spring Honey taste like?
Bright, floral, and pollen-forward in the way that tastes like actually being outside in May rather than like a scented candle. There's real complexity underneath the sweetness, the kind that comes from a multi-floral bloom rather than a single nectar source. The flavor holds its own next to strong cheese or savory food, but it's light enough to drizzle over fresh ricotta without overwhelming it. People who think they don't like floral honey usually mean they don't like perfume. This isn't that.
Is Spring Honey available year-round?
No, and that's the point. Spring Honey is a Honey Royale, harvested once a year during a brief bloom window at the farm. When the current batch sells out, the next jar won't be available until the following spring. Honey Royales are never discounted, because the scarcity is the offer. If Spring Honey has been on your list, the time to act on that is while it's still on the shelf.
What does Spring Honey pair well with?
It works across a wide range of pairings: aged cheddar, blue cheese, and brie on a cheese board; Greek yogurt and fresh ricotta; vinaigrettes built with mustard and red wine vinegar; chamomile or lavender tea; warm scones and biscuits. The floral brightness is distinct enough to show up in recipes where most honeys just taste sweet, which is exactly what makes it earn its place. And eaten straight off a spoon is, honestly, where most jars seem to end up going.
Why is my honey crystallizing, and is it still good?
Crystallization is what raw, minimally filtered honey does. It is not spoilage, not a defect, and not a sign that anything has gone wrong. Most varieties will start to set within a few months, depending on the floral source and the temperature of your kitchen. To return it to a pourable state, place the sealed jar in a bowl of warm (not boiling) water for a few minutes and stir gently. Skip the microwave, which can scorch the natural enzymes and aromatic compounds that make raw honey worth buying in the first place.
How should I store raw honey?
Keep your honey at room temperature, away from direct sunlight, with the lid screwed on tight. A pantry shelf or cabinet works beautifully. Honey is one of the few foods that does not spoil, so there is no need to refrigerate it. In fact, the cold will speed up crystallization. If your jar does begin to set, that is normal and easily reversed with a warm water bath. Use a clean, dry spoon every time, and your honey will hold its character for years.
