Step One: Process the Flour + Butter

This recipe begins with a food processor. Some people may recommend using a pastry knife or a pastry blender, but this works great if you don’t over-mix the flour and butter. One thing is for sure; you need to be using cold butter. You can even freeze the butter for this recipe!

In a food processor bowl, combine the flour, salt, and baking powder and give it a few quick bursts to combine the ingredients. Next, chop the cold butter (or coconut oil) into pieces and add it to the flour mixture. Do this several times until the fat is incorporated throughout the flour. Again, pulse in rapid bursts.

Step Two: Combine Wet Ingredients

Now we'll combine the wet ingredients. In a mixing bowl, stir the ground flax, cornstarch, water, milk, and honey. Stir to combine. Set aside.

Step Three: Prepare the Fresh Strawberries

This is a fresh strawberry scones recipe, so we must prepare the strawberries. Begin by removing the stems from the strawberries and cutting each one in half. Then cut those halves in half, thus, quartering the strawberries.

Add the chopped strawberry pieces to the flour mix in your food processor. Pulse 2 - 3 times in quick bursts. These quick pulses help coat the strawberries and break them into smaller pieces.

If you are using frozen strawberries, be aware that they can release too much liquid and make the batter too wet. To prevent this, thaw the strawberries and pat them dry before adding them to the mix. Alternatively, you can use dried strawberries if fresh ones are not available.

Step Four: Make & Shape the Batter

Pour the strawberry flour mixture over the honey mixture. Gently stir to combine. It will be a crumbly mix. Add the strawberry vodka (or plain vodka works here, too), one tablespoon at a time. The vodka will help make the mixture more manageable and evaporate in the baking process, creating a flakier scone.

Pour the batter onto a lightly floured surface. Gently form the dough into a circle, around 7 - 8 inches in diameter. Cut the circle in half, then turn and cut the halves in half, creating four equal triangles. Cut each of those in half to create eight triangle pieces. If pieces flake, add a little vodka to help patch them together.
