There’s an old idea called bikkurim. When the harvest came in, the first and finest of it was carried forward and given. Not sold. Not stored. Not saved for a better occasion. The best was for giving.
We named this set for it. Three Royale honeys, the ones we hold apart from the regular line. Fireweed, from the magenta flower that is first to bloom after a forest fire. Lavender, from a mountain region of Spain where lavender is the only crop and the season lasts a few short weeks. Apple Blossom, from upstate New York orchards in flower, with a red blush you can see through the glass.
Three flowers, three jars, nothing blended. Each one tastes of a single place and a single bloom. That is rarer than it sounds, and it is the whole point.

The name comes from bikkurim, the old practice of bringing the first and best of the harvest forward as an offering instead of selling it. The idea is that the finest of something should be given, not saved for later. That shaped this set: the honeys we hold back from the regular line, put together for giving to someone who has earned them.
No. The idea behind it is older than any one holiday, and the honeys are good in every month of the year. People give it as a host gift, a client thank-you, a housewarming or new-job gift, and a birthday present for the honey lover in their life. It also still belongs on the Rosh Hashanah table.
Royale is our top tier of honey, set apart by provenance and scarcity. Each one is a single varietal, often from a short season or a small harvest. Royale honeys are never discounted, and that includes this set. When a Royale harvest sells through, it is gone until the bees and the bloom make it again.
Yes. The honey in this set is Star-K kosher certified. It is minimally filtered and jarred by hand in our Owings Mills, Maryland facility, where every batch of our honey is checked before it ships. Star-K is the certification we use for our honey, and it covers all three jars in this set.
It can, and that is a good sign. Minimally filtered honey keeps its natural character, and crystallizing over time is part of that. To bring a jar back to liquid, set it in a bowl of warm water and stir now and then. Skip the microwave, which heats unevenly and can flatten the flavor.
At room temperature, with the lid on tight, away from the stove and direct sun. A pantry shelf is ideal. The refrigerator speeds up crystallization, so leave the jars out. Stored this way, honey keeps for a very long time, which helps if you want three jars of Royale honey to last.
