That is this set. Three of our Royale honeys, withheld from the regular line and gathered together for the new year. Fireweed, from the magenta bloom that rises after wildfire. The first of any harvest is the smallest. We made a limited number of these sets and we will not make more on the same terms. When they are gone, the next harvest takes its time — until the bees and the bloom decide otherwise.

The set includes three of our Royale honeys: Fireweed, Wild Lavender, and Apple Blossom. Each is a single varietal drawn from its own bloom — fireweed from the magenta bloom that rises after wildfire, lavender from the field in high summer, and apple blossom from the orchard in flower.
How large are the jars?
Each set includes three 11oz jars, one of each varietal.
Are these honeys raw?
Yes. Like all our honey, these are raw and minimally filtered, so they keep the character of their floral source.
Is this a good gift for the new year?
It's made for it. Apple and honey is the oldest pairing there is, and this set brings three distinct varietals to the table for the occasion. It also suits anyone who appreciates the difference a single-origin honey makes.
How should I store raw honey?
Keep your honey at room temperature, away from direct sunlight, with the lid screwed on tight. A pantry shelf or cabinet works beautifully. Honey is one of the few foods that does not spoil, so there is no need to refrigerate it. In fact, the cold will speed up crystallization. If your jar does begin to set, that is normal and easily reversed with a warm water bath. Use a clean, dry spoon every time, and your honey will hold its character for years.

Is the Honey Royale Gift Set appropriate for Rosh Hashanah?
Yes. All three honeys in the set are Star-K Kosher certified, which makes the set a strong fit for Rosh Hashanah gifting and any occasion where kosher certification matters. The traditional symbolism of honey at the new year (a wish for sweetness in the year ahead) carries well when the honey itself is genuinely rare and considered. What is "Honey Royale" and why are these honeys never discounted?
Honey Royale is the tier we reserve for our rarest single-origin honeys. These varietals all qualify because each one depends on an extraordinarily narrow set of conditions: a brief bloom window, the right weather, the right ecosystem, and beekeepers willing to time everything precisely. The yields are small, the windows are tight, and the supply genuinely runs out. We never discount Honey Royales because the scarcity is the offer. Marking them down would mean undermining the work that made them possible.
