I’ve been making a version of this recipe for years (peanut butter, oatmeal, and honey) but decided to add a few extras into the mix. This recipe is so easy and quick – but the best part is that it’s healthy and satisfies all types of cravings!

How to Make No-Bake Oatmeal Peanut Butter Nutballs

Step 1: Mix everything

Place everything except the extras in a food processor. Pulse for a few seconds, push down the ingredients, and pulse again until the ingredients are combined.

Step 2: Add-Ins and Roll

Add the extras (chocolate chips, anyone?) and give it one more rapid pulse to combine. I like to reserve a few extras for rolling the finished balls to make them look irresistible. Roll the dough into bite-size balls, and roll in extra add-ins if you'd like (and who doesn't?)

Step 3: Refrigerate

Allow the nutballs to chill in the fridge for about 5-10 minutes before serving to firm up or store in the freezer and allow them to sit at room temperature for 30 minutes. Store in the fridge.

Step 4: Dip in Chocolate

To make this classic recipe even more indulgent, dip each ball into melted dark chocolate chips before setting them aside on parchment paper to harden. For the dark chocolate coating, in a double boiler, makeshift or otherwise, melt a tablespoon of coconut oil and add 2 ounces of dark chocolate. Dip balls in chocolate mixture and refrigerate. Once cooled and solidified, you will have thirty tasty little treats ready to be enjoyed!
