On a rainy Friday morning, I am in our test kitchen, working on a new cookie recipe. The goal is to come up with yet another healthy cookie that can be served for breakfast lunch or dinner. These paleo cookies are made with goodMix blend 11 and a complete experiment. Because all my other cookies seem to require a lot of time and a lot of messy dishes, my challenge is to do this with no more than three dishes. I am not sure what to expect, but as with all recipes, I hope for the best. Be sure to follow the recipe all the way to the end to see the most recent shot of my cookie monster.
Making Paleo Cookies with a ready-made seed nut and fruit mix was EASY
GoodMix Blend 11 is a seed, nut and dried fruit blend that comes ready to use, right out of the bag. From some experimenting that I have done, you are better off “activating” the blend overnight with a little water, in the refrigerator before use. My first try was topping Greek yogurt with it, a dollop of honey and some fruit. Soaking is necessary to activate some of the supportive enzymes.
Soak and refrigerate the blend overnight
I could see soaking it overnight in a cup of water or nut milk in the blender, and adding all the other smoothie ingredients in the morning and using it that way. I could also see using it for a cookie recipe under the right conditions. In this case, I blended the wet ingredients in my Vitamix and then poured it over the contents of one bag of the Good Mix Blend 11. I mixed it well and refrigerated it.
This batter for this recipe stayed in the refrigerator for 2 hours before I attempted molding it into cookies using this nifty cookie maker and storage container that I bought from Food 52 It would have been a total sticky mess if I didn’t wait the 2 hours and they would have lost their form and it would have been too much of a hassle. I wanted these paleo cookies to be easy to make, fast to mix, and delicious. So here’s my process, step-by-step.
How to Make Paleo Cookies, Fast and Easy!
Step One: Preheat the oven and get the ingredients together
Set your oven on 325F. Line a cookie sheet or two with parchment. Gather your ingredients. You’ll need a bag of goodMix blend 11, 10 organic dates, a cup of unsweetened coconut milk, ground cinnamon, and a banana. Oh and you'll need one bowl and a big spoon, that's it!
Step Two: Prepare the Dates
Take the ten organic dates out of the container and cover them with boiling water. Do you know that fresh dried dates often have mold on them? That’s why it’s a good idea to wash them off before you use them. This process also softens them and makes removing the pit with your fingers super-easy.
Step Three: Blend
Put the pitted dates, cinnamon, banana, coconut milk, and water into the Vitamix blend on high until thoroughly blended. Empty the goodMix blend 11 into a large bowl by tearing open the container and pouring it all in one large bowl. Cover goodMix with the liquid just created in the Vitamix. Stir and refrigerate for about 20 minutes.
Step Four: Form Paleo Cookies
In our special cookie form from Food52, place the batter, snap the lid in place, and place it in the freezer. You can stop there for a time in the future that you want to serve warm paleo cookies, pull out the number of cookies you need and bake them. Once frozen remove them from the form and place on parchment-lined cookie sheet.

One thing that I would have liked to do, for selfish reasons, was add honey! Swap 5 dates with 2 Tablespoons of honey.
