  • Salt
  • Baking powder
  • Unsalted butter or coconut oil
  • Ground flax meal
  • Cornstarch
  • Water
  • Plant-Based Milk
  • Raw Eastern Shore Honey
  • Fresh strawberries
  • Strawberry vodka
  • Powdered sugar

One: Prepare Oven and Baking Sheet

Begin heating your oven to 400°F. Line a baking sheet with parchment paper. It's easier to have a prepared baking sheet before you are ready to bake the scone dough.

Two: Process the Flour & Butter

First, prepare the dry mixture by combining flour, salt, and baking powder in your food processor bowl or pastry blender. Pulse briefly to mix these ingredients together. Next, cut cold butter or coconut oil into pieces and add them to the flour mixture, pulsing for several seconds until the fat is fully incorporated throughout the flour. Set this mixture aside.

It's important to note that you want cold butter/coconut oil for this step. You can even freeze your unsalted butter before adding it to the mix!

Three: Combine Wet Ingredients

In a separate mixing bowl, create your wet ingredients by combining ground flax meal, cornstarch, water, milk, and honey. Stir these ingredients thoroughly until well combined, then set this mixture aside as well.

Four: Prepare the Fresh Strawberries

Now prepare the strawberries by removing the stems and quartering each berry. Add these chopped strawberry pieces to the flour mixture in your food processor. Pulse quickly 2-3 times, just for a second or two each time. These quick pulses will help coat the strawberries and break them into smaller pieces without pureeing them.

Five: Make & Shape the Batter

Pour the strawberry-flour mixture over your honey mixture and gently stir to combine. The resulting mixture will be crumbly. Add vodka one tablespoon at a time to make the dough more manageable. The vodka will evaporate during baking, creating a flakier scone texture.

Transfer this mixture onto a lightly floured surface and gently form it into a circle approximately 7-8 inches in diameter. If pieces flake off, add a small amount of vodka to help patch it together. Cut the circle in half, then cut each half in half to create four equal triangles. Finally, cut each of those triangles in half to create a total of eight triangle pieces. Transfer these triangles to a tray and refrigerate them for 30 minutes to chill.

Chilling the scone triangles before baking will help them hold their shape.
