Spring honey gets all the attention — flowers everywhere, bees buzzing like it’s Mardi Gras. But autumn honey? That’s the underdog. The late bloomer. The one that shows up when everything else is calling it quits. Autumn honey is rare. Like, really rare. The bees need a Goldilocks summer — not too hot, not too dry — and a buffet of late-season blooms. Even then, they only make extra if they're feeling generous.

What Makes Our Autumn Honey Special?

  • Rare by nature: Autumn Honey is a Honey Royale — harvested in small batches from our Eastern Shore farm only when the season produces enough to share. Quantities are limited and may sell out.

Why is Autumn Honey so limited?

Autumn Honey is one of our Honey Royale varietals, harvested in small batches from our own Eastern Shore farm only when the bees produce enough surplus to share. Late-season honey requires a Goldilocks summer (not too hot, not too dry) and a steady run of fall blooms. In a lean year, there may be very little, or none at all. Once a batch sells out, it is gone until the following autumn. Honey Royales are never discounted, because scarcity is the offer.

Where does Autumn Honey come from?

Exclusively from Chesterhaven Beach Farm, our 102-acre pollinator farm on Maryland's Eastern Shore. During the final weeks of the bloom season, the bees forage goldenrod, aster, sunflower, and buckwheat, racing the first frost. Nothing in this jar comes from outside beekeepers, and you will not find this honey anywhere else. It is the kind of single-origin provenance you can verify if you wanted to, and the farm welcomes visitors when the season allows.

Why doesn't Autumn Honey crystallize like other raw honeys?

Most raw honey will crystallize within a few months. Autumn Honey is the rare exception. The late-season nectar from goldenrod, aster, and buckwheat produces a honey with a different sugar composition (a higher ratio of fructose to glucose), and that chemistry keeps it liquid much longer than spring or summer varieties. It can still crystallize eventually under the right conditions, but if you have been waiting for a raw honey that pours straight from the jar all winter, this is your honey.

How is Autumn Honey different from Spring or Summer Honey?

Same farm, same bees, completely different character. Spring Honey is pale, light, and floral, made when the world is in full bloom. Summer Honey lives somewhere in the middle. Autumn Honey is the opposite of Spring: dark, bold, and complex, with hints of wet leaves, overripe fruit, and the last flowers of the year. The bees taste the season the same way you do, and the honey reflects whatever the year decided to be. If you have only had Spring Honey, this one will surprise you.

Why is my honey crystallizing, and is it still good?

Crystallization is what raw, minimally filtered honey does. It is not spoilage, not a defect, and not a sign that anything has gone wrong. Most varieties will start to set within a few months, depending on the floral source and the temperature of your kitchen. To return it to a pourable state, place the sealed jar in a bowl of warm (not boiling) water for a few minutes and stir gently. Skip the microwave, which can scorch the natural enzymes and aromatic compounds that make raw honey worth buying in the first place.

How should I store raw honey?

Keep your honey at room temperature, away from direct sunlight, with the lid screwed on tight. A pantry shelf or cabinet works beautifully. Honey is one of the few foods that does not spoil, so there is no need to refrigerate it. In fact, the cold will speed up crystallization. If your jar does begin to set, that is normal and easily reversed with a warm water bath. Use a clean, dry spoon every time, and your honey will hold its character for years.
